COCKLES FROM THE GALICIAN RIAS
Sourced from the Galician Rias, more specifically from the Noia Ria, the location of which is the source of the finest quality cockles.
These cockles are fished only in season and when they have reached an appropriate size. The season for cockling only lasts for a few weeks over the months of September and October. They are packed by hand according to their size and homogeneity. This careful process results in cockles with attractive white-coloured flesh with a touch of yellow, a sure sign of their freshness and source.
The purging and cleaning process of the cockles is done artisanally and carried out via a “double cleansing” to guarantee that they contain no traces of sand. The boiling process and packing are carried out at speed to ensure that the cockles remain perfectly fresh and maintain their full flavour.
