GRAPE VARIETIES : 100% Verdejo
WINE-MAKING: Night-time machine-harvesting to preserve the freshness of the grapes. Vinification solely with the free-run juice from the first press, using a pneumatic press. Cold maceration of the must in contact with the skins. Fermentation in stainless steel tanks at a controlled temperature of 17°C. Static settling, fining and cold stabilisation.
Colour: A bright, straw-yellow colour with greenish glints.
Nose: Clean, intensely aromatic and complex on the nose with notes of white fruits, citrus and an aniseed touch coming through. Also notes of pear, green apple, lemon zest and grapefruit.
Palate: Elegant, smooth and flavoursome with good body. A hint of bitterness, typical of the Verdejo grape, comes through in the finish.
SERVING TEMPERATURE: 6 to 8°C
FOOD PAIRINGS: Great as an aperitif or to pair with all types of fish, smoked dishes, rice, deep fried seafood or Japanese cuisine.
