1. We use sugarcane of the green and yellow variety grown in the Dominican Republic. Alter harvesting, we chop it into pieces and clean it befare transporting it to our distillery.
2. Once at the distillery, we press the sugarcane, separate the ju ice from the solids, and the juice or guarapo is fermented and distilled. We don’! use molasses in this process, and for this reason our rum is a natural agricultura! rum of excellent quality.
3. lmportantly, in the distillation process we use a copper still, which enables us to obtain a high quality distillate for the ageing process.
4. The barreis which we use forthe ageing are 80% American oak, originally used for Bourbon whisky ageing, and 20% French oak, previously used to age white wines, brandy and sherry. The blends of the different barreis and types of toas! used by our Rum Master Blender, results in a 7 year-old rum with a different and superior qualityto other rums.
